The Paleolithic Diet has been popular for over ten years, and with good reason: it’s simple, it’s healthy, and it works. What is gluten? According to the Whole Grains Council, gluten is a protein found in wheat — such as spelt, kamut, einkorn, farro/emmer, barley, rye and triticale — that’s hard for some people to digest. It helps bind and shape foods by creating elasticity. About 1 percent to 2 percent of the population has celiac disease, which is an autoimmune form of gluten intolerance.
Buying flour for cooking and baking can be a no-brainer when you can use all-purpose flour, but if you’re gluten-free, then choosing the right flour gets a bit more complicated. There are so many types of gluten-free flour available and when it comes to cooking and baking, all the usual rules change.
